Easy pumpkin soup
Making home made pumpkin soup is so easy that it will make you wonder why you ever bought it ready made at the grocery store. All you'll need is pumpkin, onions, vegetable stock and a few spices!
This recipe serves 4 and is ready in less than 30 minutes.
- 1 kg of pumpkin
- 1 onion
- 750 ml of vegetable stock
- 250 ml of water
You'll also need a stick mixer or a blender.
Start by peeling the pumpkin and dicing it into 3cm chunks. Peel and cut the onion into smaller cubes.
Transfer the pumpkin and onion into a pot and add the vegetable stock and water. Boil for 15 minutes or until the pumpkin is nice and tender.
Add salt & pepper to taste or switch things up by adding a bit of turmeric or cinnamon.
For a richer, creamier soup, you can add a bit of milk or cream if you feel like it. These can also be switched to a vegan friendly alternative such as coconut cream or soy milk.
We like to make our soups a bit more special by adding a few toppings on top. While popular ones are cheese and croutons, we also like to add sunflower seeds, pine nuts or sesame seeds.
